STRAWBERRY CAKE BITES RECIPES
The freeze-dried strawberries in this recipe act as a natural dye, turning the cake bites a dusty pink color. If you’d prefer a more intense color, add the optional red or pink food coloring until you get the desired color.
Ingredients:
- Bak-Klene Nonstick Cooking Spray
- 1 3/4 cups (9 oz./280 g) all-purpose flour
- 1 oz. (30 g) freeze-dried strawberries, crushed into a fine powder
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. kosher salt
- 12 Tbs. (1 1/2 sticks) (6 oz./160 g) unsalted butter, at room temperature
- 1 cup (8 oz./250 g) granulated sugar
- 3 egg whites, at room temperature
- 2 tsp. vanilla extract
- 1/2 cup (4 fl. oz./125 ml) buttermilk, at room temperature
- Red or pink food coloring (optional)
- Confectioners’ sugar for dusting
Directions:
Preheat an oven to 350°F (180°C). Spray the wells of a Nordic Ware Strawberry Bitelet Plaque with the nonstick cooking spray.
In a bowl, sift together the flour, strawberry powder, baking powder, baking soda and salt.
In the bowl of a stand mixer fitted with the flat beater, cream the butter and sugar together on medium-high speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl, add the egg whites and vanilla and beat until combined, about 30 seconds.
In two additions, add the flour mixture to the butter mixture, alternating with the buttermilk, beating on low speed until just combined. Increase the speed to medium-high and beat for 30 seconds.
If desired, add the food coloring to the batter until the desired color is achieved, beating until no streaks remain.
Spoon about 1 Tbs. of the batter into each of the prepared wells. Place the plaque on a rimmed baking sheet and transfer to oven. Bake until the cake bites are puffed up and the tops spring back when lightly touched, 12 to 15 minutes.
Let cool in the pan for 5 minutes, then turn the cake bites out onto a wire rack. Let the plaque cool slightly, then wash and pan and spray the wells with more of the nonstick cooking spray. Repeat to cook the remaining batter.
